The total time will depend on the thickness of your bacon. Transfer the cooked bacon to a paper towel-lined plate and let cool. When hot, add the onion, peppers, and garlic. Cook, stirring occasionally for 5 to 6 minutes, until the vegetables are wilted and slightly browned.

This can be done up to days in advance. Store in the refrigerator until ready to prep the casserole. Just husk the corn, and bring a large pot of water to a boil. When the water reaches a boil, add the corn and boil for 5 minutes, then remove from the pot. Once cool, slice the corn kernels off the cob. In a large bowl, stir the onion and red bell pepper mixture, corn, kale, chicken, mayo, salt, and pepper.

Still turns out delicious! I also mix the cheese and bacon instead of it being on top, and ran out of mayo so used some yogurt with a tiny bit of mayo. Sooooo good! A crowd pleaser!

Chicken was soooo soft and juicy! I used iron skillet to bake and added a few minutes since I started mashed potatoes a bit too late. I am lactose intolerant. Could I substitute lactose free milk enriched with ghee for the half and half? This was my first ever creamy dish i liked after having to go glutenfree and lactose free.

So i adjusted it by using gf plain flour. Will be cooked again! Tried this last night using chicken tenders. It was fantastic!
