To bake the chicken, brush with olive oil and season with salt and pepper to taste. Let cool completely and store in the refrigerator until ready to prep the casserole. The total time will depend on the thickness of your bacon. Transfer the cooked bacon to a paper towel-lined plate and let cool. When hot, add the onion, peppers, and garlic. Cook, stirring occasionally for 5 to 6 minutes, until the vegetables are wilted and slightly browned.
This can be done up to days in advance. Store in the refrigerator until ready to prep the casserole. Just husk the corn, and bring a large pot of water to a boil. When the water reaches a boil, add the corn and boil for 5 minutes, then remove from the pot. Once cool, slice the corn kernels off the cob. In a large bowl, stir the onion and red bell pepper mixture, corn, kale, chicken, mayo, salt, and pepper.
Transfer this mixture to a baking dish and top with shredded cheese and bacon. Bake for 30 minutes or until the cheese is lightly browned and bubbly. I also used frozen corn. But I think tomorrow it will set more. I added siracha and was one happy preggo lady. And my husband and I will have at least 3 meals each. Thank you! Hey Stephanie! Still turns out delicious! I also mix the cheese and bacon instead of it being on top, and ran out of mayo so used some yogurt with a tiny bit of mayo. Sooooo good! A crowd pleaser!

Chicken was soooo soft and juicy! I used iron skillet to bake and added a few minutes since I started mashed potatoes a bit too late. I am lactose intolerant. Could I substitute lactose free milk enriched with ghee for the half and half? This was my first ever creamy dish i liked after having to go glutenfree and lactose free.
So i adjusted it by using gf plain flour. Will be cooked again! Tried this last night using chicken tenders. It was fantastic!see url

They browned, but not as golden as I quite wanted so next time I will do batches. Also, I added a teaspoon of cayenne to the white sauce oh my gosh it was fabulous! Can this be baked in a deep saute pan instead? I am not really a very good cook and most of my dishes do not come out very well but I tried this tonight and it turned out absolutely perfect.
